Today for lunch I had a variation of Thanks Mr Johnson to which I added a great new product (to me) that I found at Coles on the weekend. It is Capriccio brand marinated shredded Eggplant from Italy- If your local supermarket has it (in mine it was in the imported food section) I really recommend you buy it. I have been using it as a 'throw-in' for my quick pasta sauces, as an antipasto accompaniment, on bread without anything, on a spoon without anything.... just pretty much in my mouth constantly...
