My Lunch 2

Due to the fact that take-to-work lunches are usually very mince-heavy in our household (this is because spag-bol is easy to prepare and freeze and that J makes most of the lunches), and the fact that I am trying to be a bit more carb-conscious, I have been trying to come up with creative or at least slightly interesting mince recipes... I happened to catch Jamie Oliver on Saturday Kitchen on Saturday, and I thought I would try a variation on his 'Botham Burger' for my lunch this week.
There are two things that I love about this burger, 1. It is ROASTED, so for 25 minutes it sits in its own good-quality beefy juices and cooks in them, and 2. the 'special' ingredients - Jamie's: Dijon Mustard and GHERKINS (Gherkins in Burgers rock!) and mine: Diced Eggplant. Yum.
